Today's Recipe:
Ranch Chicken & Rice
1 lb boneles, skinless chicken breast
1 Cup Rice
1 or 2 Packets Ranch Seasoning
1 Can 98% fat free cream of chicken soup
1 can fat free chicken broth
Preheat Oven to 375. In a medium or large baking dish, combine the soup and half of the broth until smooth. Add Ranch seasoning (use 2 packets if you want a stronger ranch flavor). Add rice and stirr in the rest of the broth. Add the chicken (either cut up in pieces or on top of the rice. Sprinkle the top with ranch seasoning for extra flavor (optional). Bak in the oven for 40 minutes or until the chicken and rice are cooked.
I made this with 2 packets of Ranch (because I LOVE ranch) and it was too much. I would only use one and I think it would turn out pretty good. I also poached the chicken before I added it and then cut it into small chinks (I couldn't stand mixing raw chicken with the rest of the ingredients). I also added some mushrooms.

Lunch today was a wrap made with the new Morningstar Chickn Strips - it was pretty good, although I would recommend using some sort of sauce or additional flavoring with the strips.

I also made Stewed Rhubarb (my mom used to make it all the time and it sounded good). WW.com says that Rhubarb is 0 points and with a little splenda it is pretty good (although I cooked it down so it will probably be a point or two).

is the rice instant or regular? that looks like something Kirk would love! What's the point damage on that one?

Duh - points would help. For 2 packets of ranch it is 8 points per serving. However, they are pretty big servings that could be cut down to make it lower in points and only one ranch packet may lower it to 7 points - I didn't try to calculate it. The recipe does not specify instant or regular rice. Now that I think about it, though, I used Instant and it turned out just right. I don't know how it would work with regular.

Another duh - the recipe makes this into 4 servings. I think it could easily be 5 or 6 if you want to lower the points
