The Chicken Marsala was FANTASTIC.

4 Boneless, Skinless Chicken Breasts (1/4 lb each)
Salt and Pepper
2 tsp. Olive Oil
2 tsp. All Purpose Flour
1/2 Cup FF Chicken Broth
1/2 Cup Marsala Cooking Wine
2 Cups Mushrooms
2 Cups Uncooked Bow Tie Pasta

Heat the Olive Oil in a skillet. Salt and pepper the chicken breasts and cook in the oil. Set the chicken aside. Add mushrooms to the skillet and cook for about 3 minutes. Add flour to the mushrooms and stir to coat. Add wine and broth. Bring to a boil and let cook until sauce thickens (about 3 minutes). I added in the bow tie pasta and it made this a filling and delicious meal. With the pasta there is not a lot of sauce, but it was plenty for me.

4 Servings - 6 points per serving.

I also met with my trainer again today - SHE KICKED MY BUTT! I don't think I have ever worked out that hard. She was very nice, but I really think she is going to go home and decide never to train me again, because I was so bad at most of the things she wanted me to do!! It is interresting that when I work out by myself I feel like I am pushing myself as hard as I can, but I guess I am not, because she definately pushed me harder today.
